How to choose
Flat or round bottom
Round-bottom woks are the traditional shape and need a gas burner with a wok ring. On electric coil, smooth-top or induction ranges, only a flat-bottom wok makes enough contact to heat properly; Natural Resources Canada advises smooth, flat-bottomed cookware for full contact with the element (NRCan, cooking appliance tips). Diameter
Wok sizes refer to the rim. For a family of three or four, 33–36 cm (13–14 in) gives room to toss without spilling. For one or two people, or a narrow cooktop, 30 cm (12 in) is easier to handle.
Thickness and weight
Thin, light woks respond fastest to heat changes and are easy to toss one-handed. Heavier hand-hammered 15-gauge steel, about 1.7 mm, holds heat better when you add a load of cold vegetables. A long wooden handle plus a helper handle makes a heavier wok manageable.
Pre-seasoned or raw
Pre-seasoned woks are ready after a wash and a thin coat of oil. Unseasoned woks ship with a protective oil coating that must be scrubbed off before you season them yourself on the stove. Both end up in the same place after a few weeks of cooking.
Who a carbon steel wok is not for
- Cooks who want to soak pans or use the dishwasher: carbon steel will rust.
- Anyone cooking mostly acidic, long-simmered dishes such as tomato sauces; seasoning strips quickly. Health Canada also advises against cooking or storing acidic foods in uncoated cast iron for long periods (Health Canada, safe use of cookware), and the same habit protects carbon steel.
- Kitchens where a heavy pan is hard to lift; consider a lighter 30 cm wok or a PFAS-free ceramic pan instead.
Care in 60 seconds
Rinse with hot water while the wok is still warm, scrub with a brush or bamboo whisk, dry it over heat, and wipe on a few drops of neutral oil. A little soap will not ruin established seasoning. If rust appears, scrub the spot back to bare metal and re-season it.
