Food Storage That Cuts Waste: Where Canadian Groceries Actually Go Bad

The average Canadian household throws out well over a thousand dollars of food a year, and almost none of it spoils on the plate — it dies in storage. The fixes are unglamorous: right container, right zone, visible leftovers. This is the room-by-room version, written for real fridges that already have a mystery jar in the back.

The fridge is a map, not a box

Cold air sinks and the door is the warmest place, so where food sits matters as much as the temperature dial. Dairy and eggs belong on middle shelves, never the door; the door takes condiments and juice. Raw meat lives on the bottom shelf in a container so drips can't reach anything. Crisper drawers are humidity tools — high humidity (closed vents) for leafy greens, low (open vents) for apples and pears, and never together, because apples exhale ethylene that wilts every leaf sharing the drawer. Run the fridge at 4°C or below and give it a thermometer, because the dial lies.

The habit that beats every gadget: an eat-first bin. One visible container at eye level where anything near its date goes. It turns 'I forgot about that' into Tuesday's dinner.

Dry goods and the airtight rule

Flour, rice, pasta, cereal and coffee all degrade the same way — air, light, moisture and pantry moths — and one fix handles all four: genuinely airtight canisters. Square ones waste less shelf. Onions and potatoes want dark and dry but not each other's company (potatoes sprout faster beside onions); bread lives on the counter days, in the freezer months, and in the fridge never, where it stales fastest. Frequently asked questions

What temperature should my fridge be?

4°C or lower (freezer -18°C). Use a fridge thermometer — built-in dials are approximate and the difference between 4 and 7 degrees is days of freshness.

Why do my greens wilt so fast?

Usually ethylene exposure — apples and pears sharing the drawer — or wrong humidity. Greens want the high-humidity drawer (vents closed), alone, ideally with a dry paper towel in the container.

Do airtight canisters really matter?

Yes — they end staleness and pantry-moth problems at once, and square airtight containers store more per shelf than the packaging food arrives in.
