How to use
Begin by tempering the chocolate to stabilize the crystals. Melt about 75 percent of the chopped chocolate in short intervals, then gradually add the remaining pieces, stirring until smooth. Keep the melted chocolate between 100 and 118 F (37 to 48 C).
Continue by bringing the chocolate to about 86 F (30 C) as you seed with the remaining pieces and dissolve them completely. This tempering step helps you achieve a glossy surface and clean release from the mold.
Pour tempered chocolate into the mold cavities, fill evenly, and leave a small gap for the second half. Chill in the refrigerator for roughly 20 minutes, or until solid. When ready, gently release the spheres from the mold, using a light tap to dislodge any trapped air bubbles.
